Zucchini Grattan

Ingredients
- 2 Tablespoon Oil
- 2 Large Onion
- 3 Cloves Mince garlic
- 1 Kilo Lamb meat chunks
- 1 Kilo Zucchini
- 2 Large Chopped tomatoes
- 2-3 Pieces Bay leaf
- 1 Teaspoon Mixed spices
- 1 Cup Boiled chickpeas
- 2 Teaspoon Salt
- ¼ Teaspoon Black pepper
- ½ Teaspoon Ground cardamom
- ½ Teaspoon Ground coriander
- 3-4 Small Sliced green chili
- 2 Large Quartered tomatoes
Instructions
- In a large skillet place the oil and heat over medium heat. Add the onion and stir until tender and then add the garlic and stir for 1-2 minutes.
- Add the meat chunks and cook until brown in color and dry.
- Cut the zucchini into cubes or as desired and add to the meat. Add the tomatoes, bay leaves, mixed spices, chickpeas, salt, pepper, cardamom and coriander. Stir the ingredients just to mix.
- In a blender jug place the chilies and tomatoes. Add about 1 cup of water and blend on high speed until smooth liquid forms. Pour on the meat and zucchini in the skillet.
- If you are using oven safe skillet you can put directly in the oven. If no, put the zucchini and meat in an oven safe dish or skillet and cover.
- Fit the middle rack in the oven. Preheat oven to 350 degrees.
Bake the Zucchini Grattan for 60-70 minutes or until meat is well cooked.
